Start with service speed
A live counter is only successful when it can keep pace with demand. Chaat, fruit and many beverage counters can serve quickly when mise en place is strong. Dosa, pasta, grills and some Asian preparations take longer per order and need enough cooking points, staff and collection space.
Ask how the counter will be replenished, where guests will queue and whether more than one service point is needed. A beautiful counter positioned in a narrow passage will still feel frustrating.
Choose counter families before individual dishes

Chaat, dosa, tiffin, kebabs and regional snacks feel familiar and energetic. They work especially well during arrivals, Sangeet evenings and reception service.
Global & contemporary
Chinese, pasta, pizza, shawarma and grill formats add contrast. Choose items that can be cooked consistently at the pace your guest count demands.
Fresh & sweet
Fruit, mocktail, jalebi, ice cream and dessert counters can lighten the experience or create a strong closing moment without adding another heavy main course.
Avoid repeating the buffet
A counter should contribute something the static menu cannot: freshness, personalisation, texture or performance. If the buffet already has several fried starters, another fried counter adds volume but not variety. If the main course is rich, a fruit, salad or beverage counter may create better balance.
Match counters to the function
- Haldi or daytime events: refreshing drinks, fruit, chaat and concise regional snacks.
- Sangeet: social, fast-moving counters that guests can enjoy between performances.
- Wedding: regional favourites and made-to-order items placed around the ceremony schedule.

Confirm the venue requirements
Every counter needs a practical production plan. Check electrical load, gas permissions, water, ventilation, weather cover and waste movement. Smoke, aromas and heat should not affect the stage, guest seating or photography. Counter facades and signage should also belong to the wider event design.
Make the choices within each counter deliberate
Guests rarely need every possible item at one station. A concise group with a familiar choice, a distinctive choice and a suitable vegetarian option is often clearer and faster. Keep condiments and garnishes organised so customisation does not slow the core service.
